Among the crucial factors we can include the agro-climatic conditions of Guatemala, the species and varieties that have been developed, the agronomic techniques and the whole harvesting process. It is necessary to emphasize that Guatemalan Coffees are characterized by a careful control and monitoring process of their production. From handpicking in the fields (only the ripe fruits) to placing in burlap sacks for shipping and roasting, all the people involved in the coffee value chain are submitted to a process of classification, to assure the quality of the beans s&#101lected during the different coffee transformation stages.
