Pastel Coffee Works is a specialty coffee roastery that began as a small cafe in Seoul in 2011. Inspired by the way coffee’s aroma and flavor can bring back memories and emotions, we craft “coffee that lingers in memory.” Much like the Proust effect, where a scent recalls a moment from the past, we hope each cup turns an everyday moment into a lasting memory.
Our approach is rooted in artisan craftsmanship, with careful attention to even the smallest details. We value depth over scale, guided by years of research, experience, and a commitment to nurturing skilled baristas.
We seek out coffees that express the distinctive character of their origins, with pleasing sweetness, a clean mouthfeel, and traceable provenance. By selecting fresh, seasonal beans and thoughtfully revealing their diverse flavors, we invite people to pause, find inspiration, and enjoy meaningful moments in their everyday lives.
